Chicken Salad Lettuce Wrap

20150918_080640Healthy lunch is on the rise… However my kids try to avoid them at all costs! Sending fruit is as close as they like to get to healthy but this was a hit! 3 ingredients… 5 minute prep time… Healthy… Kid approved… What more could a mom ask for?!

Ingredients

Mayonnaise

Fresh lettuce head

Chicken (I usually use baked chicken breast, today I used can premium chunk chicken in water)

Instructions

Open can and drain chicken

Empty can into a bowl

Chop chicken until it is almost shredded  IMG_20150917_213947

Mix mayonnaise in one spoonful at a time until desired consistency.

I chose to season with salt, lemon pepper, onion powder and ground garlic, but feel free to season to taste.

I also added chopped celery to my portion, I found my kids are not a fan of the “green crunchy sticks” lol.

Store in airtight container overnight in refrigerator.

In the morning take 1 lettuce leaf and break in half to create 2 smaller leaves.

2 scoops of chicken salad / 1 lettuce leaf

Wrap in Saran Wrap for a fresh and healthy lunch!

FYI

After a few fails I realized it’s not a great idea to pack lettuce wrap together as lettuce may not be as fresh once lunchtime arrives. Therfore wrap lettuce and chicken salad separately with a spoon and let them scoop away! Put together lunches add to the fun!

Mac and Cheese Minis

Good morning luvs,

If I ask my kids what they want for dinner, 9 times out of 10, they’re going to say Macaroni and Cheese. So it didn’t surprise me when they asked to take it for lunch. Sending a bowl of Mac and cheese complete with a fork or spoon seemed a bit messy for my bunch, and I’m pretty sure I never see the bowl again! Not to mention anything that my 2 year old can’t pickup with his fingers, ends up on his clothes. With these minis there is no silverware or Tupperware involved, just handheld goodness!

Ingredients

2 cups of pasta (I prefer rotini, elbow is great too)

1/2cup of milk

1tbs softened butter

4cups of shredded cheese (I chose Colby Jack, Sharp Cheddar, Mild Cheddar and Mozzarella 1 cup each)

2 eggs

Salt and pepper

Also needed:

Non-stick cooking spray

Standard 1 dozen muffin tin

Instructions:

Preheat oven to 400 degrees F

Boil pasta until cooked through but still al dente (about 6-7 minutes)

Drain pasta, do not rinse

Whisk eggs, butter and milk together in a large bowl

Mix in cooked pasta until coated with milk mixture

Fold in 1 cup of cheese at a time

Salt and Pepper to taste

Coat muffin tin with non-stick spray

Distribute Mac and Cheese evenly

Bake for approx 15-20 minutes or until edges are golden brown and crispy

Use a spoon, gently separating the bites from the pan

Store in refrigerator overnight in air tight container

Pop them in the microwave in the morning, wrap in foil to keep warm, and your little one is good to go!

Makes 12, I gave my 9 & 6 year old 3 minis each, and my 2 year old 2 minis.

Not your average school lunch!

Hey luv bugs,

Being a mother of 3 boys is always an adventure! We often watch The Food Network and cook dinner together, so they know creativity and great flavors! Packing lunch proved  to be the my next adventure as the boys told me “we want to have the best lunch in school”! So there I was, new lunch boxes and the same old ideas.
