Healthy lunch is on the rise… However my kids try to avoid them at all costs! Sending fruit is as close as they like to get to healthy but this was a hit! 3 ingredients… 5 minute prep time… Healthy… Kid approved… What more could a mom ask for?!
Fresh lettuce head
Chicken (I usually use baked chicken breast, today I used can premium chunk chicken in water)
Open can and drain chicken
Empty can into a bowl
Mix mayonnaise in one spoonful at a time until desired consistency.
I chose to season with salt, lemon pepper, onion powder and ground garlic, but feel free to season to taste.
I also added chopped celery to my portion, I found my kids are not a fan of the “green crunchy sticks” lol.
Store in airtight container overnight in refrigerator.
In the morning take 1 lettuce leaf and break in half to create 2 smaller leaves.
2 scoops of chicken salad / 1 lettuce leaf
Wrap in Saran Wrap for a fresh and healthy lunch!
After a few fails I realized it’s not a great idea to pack lettuce wrap together as lettuce may not be as fresh once lunchtime arrives. Therfore wrap lettuce and chicken salad separately with a spoon and let them scoop away! Put together lunches add to the fun!
